Located in a natural environment, Sierras de Burete, Lavia and Cambrón, in the valley called Hoya de los Hermanos in Cehegín (Murcia), at an altitude of over 800 meters, at the foot of the north face of the Sierra de Lavia. Organic viticulture. Monastrell, goblet-trained vineyard of more than 50 years old. Tempranillo, trellised vineyard more than 25 years old.
Limestone composition and clay-loam texture, which allows for longer maturation to obtain a greater polyphenol load and polymerization, providing good structure to the wine.
Mediterranean with mild winters and warm summers. Low rainfall. The mountain ranges surrounding this valley create a particular microclimate, protecting the vineyard from frost and strong winds.
Vintage freshness, with mild winter and not very hot summer.
Second week of October 2016. Manual harvesting in 16kg boxes.
Each plot is vinified separately in 5,000L stainless steel tanks. Table selection. Destemming and crushing of the soft grapes. Cold pre-fermentation maceration to enhance the aromatic and gustatory complexity, as well as its color. Low temperature fermentation with gentle pumping over. Malolactic fermentation in barrels. Minimal intervention. Not clarified or stabilized. Contains natural crystals of potassium bitartrate.
