Fermented with its skins, double paste, hence its golden color and good tonicity. After fermentation, the skins are removed and the wine is transferred to 500-liter French oak barrels, in which an unfilled head space is left to form a veil of flor. It is not stabilized, clarified or filtered. It contains natural crystals of potassium bitartrate.
